Just a short one this week as I had a pretty busy weekend but amongst the busyness I did manage to make one of my favourite things to eat…buffalo chicken dip!

I have to give a huge shout out to my boss while I was at Uni in the States, Craig, who gave me this recipe and it was definitely one thing I had to bring back to the U.K. with me. One of the best things about the buffalo chicken dip is how easy it is to make and how long it lasts after you’ve made it, but more importantly is how delicious it tastes! So here is the recipe that I use and the very easy method of how to make it (my style).

Recipe

220g of cream cheese

3-4 chicken breasts

½ cup (125ml) ranch dressing

½ cup (125ml) Frank’s Hot sauce or Frank’s Buffalo sauce

½ cup (50g) grated cheddar cheese

The first time I made this dip, I boiled my chicken first and shredded it up with two forks which worked well but was VERY time consuming. After this however you just place everything into a slow cooker and let it simmer until everything is melted and it’s hot enough to serve. This way is great but like I said, it is quite time consuming, so now when I make it I just put all the ingredients in the slow cooker from the get go. Obviously this way takes a little bit longer as the chicken cooks slower (as a slow cooker suggests) but I think it tastes better and requires less attention. This way is great to do if you do have a busy weekend planned as you can just put it on low and just keep checking it every now and again. So for those who have been reading my blog will know that I’ve been pants at taking photos of what I’m blogging about, however, this week I remembered!

*Now with the dip, it doesnt look the most appealing in photos but believe me, it tastes incredible so give it a try!!

Thanks for reading and keep sharing with your friends please!
